Meat-Free Monday: Healthy Veggie Sausage Traybake

We’re all trying to do our bit for the planet here at Connect, and whilst recycling or taking the bus rather than driving to work has its place, we’re now making deeper lifestyle changes to further help the planet: we’re eating less meat.

Today we have our Content and Campaign Manager, Caitlin Holmes bringing you one of her favourite meat-free meal recipes – Healthy Veggie Sausage Traybake.


Hello, it’s Caitlin here and today I’m sharing with you a delicious recipe that you may have already seen me cooking up over on our Instagram reels.

As I’ve just had a very over-indulgent Christmas, I’m now on a bit of a health kick. I’ll be using My Fitness Pal religiously so that means in order to save my waistline and the planet, I’ll be switching my olive oil to fry light, my chips to sweet potatoes and now, on a Monday, my meat to veggie alternatives.

This meal is one of my healthy favourites – I was so pleased to find that it’s low calorie, filling and it’s perfect in both summer and winter. When it comes to meat substitutions, I’ve tried my fair share. I’ve found that sausages are the closest to the real thing – and there’s so much variety out there!

With this dish you can add any vegetables that you have in your fridge, and you can switch up which seasoning you use each time. Not just that, it only takes 15-20 minutes to prepare!

Healthy Veggie Sausage Traybake:

2 Servings       Prep Time:  20 minutes. Cooking Time: 15-20 minutes

Ingredients

  • Fry Light Spray or Olive Oil
  • 6 Meat-Free Sausages – Chopped into 2CM Pieces
  • Your choice of seasoning and spices – I used Paprika, Aromat, Piri Piri Seasoning and of course Salt and Pepper
  • Low-Calorie Salad/Feta Cheese
  • 2 Garlic Cloves – Roughly Chopped
  • Any Vegetables you have in your fridge – I used
    • 4 Asparagus Spears – Chopped into CM Pieces
    • 10 cherry tomatoes – Halved
    • 2 Small Sweet Potatoes – Cut into discs 
    • 5 baby peppers – Chopped
    • 4 baby mushrooms
    • Mange Tout – A Handful cut in halves

Method

  1. Line an oven tray with tin foil and spray it with fry light.
  2. Chop your Sausages, Garlic and Vegetables and spread evenly across your tray.
  3. Spray the vegetables with fry light.
  4. Add plenty of your chosen seasoning and your preferred amount of chopped/crumbled Feta Cheese.
  5. Bake at 180° for 15-20 minutes or until the sweet potatoes have softened/started to brown
  6. Serve in a bowl and enjoy your meat-free Monday.
